Kelvin’s Perfect Breakfast

Do you eat breakfast? Early starts, long commutes and busy morning schedules mean many of us don’t make time to sit down to breakfast before heading out for the day. 

After years of working long hours in busy kitchens I have found that breakfast is such an important meal that sets you up for the day. I used to feel zapped of energy if I didn’t eat, so I’d like to share with you my recipe that’s packed full of nutrients to give you a boost!

Creamy porridge with flaxseed, blueberries and honey

I start by mixing my oats – 1 part organic oats to 2 parts rolled oats. This can be done in advance and kept in an airtight container.

When it comes to making the porridge, I tend to make it all by eye which is why there’s no set quantities for the recipe. I place the mixed oats in a bowl about a third of the way up, cover with some milk. (It’s probably a ratio of 1 part oats to 3 parts milk.) Add some dried sultanas and cranberries and microwave at 600w for 4 minutes. Once finished in the microwave, the porridge should have absorbed the milk but it shouldn’t be too thick. Simply add a tablespoon of flaxseed, a tablespoon of honey and 1 and a half tablespoons of yoghurt.

A lot of the traditionalist porridge makers out there will be set on making it the traditional way of using water and salt to bring out the nuttiness of the oats but I personally find the milk brings a creamy delicate texture to be enjoyed.
